An invitation to gather. Join us for the inaugural Chef's Table at ADRIFT Mare, where an intimate communal table becomes the setting for a series of globally inspired dining experiences, each exploring the unique flavors and traditions of a different culinary destination.
Led by Executive Chef Juan Carlos Lavalle and limited to just 10 guests, the evening unfolds through a thoughtfully curated tasting menu inspired by Spain's coastal regions, where each course is paired with stories of place, technique, and culinary heritage.
Begin with a selection of Spanish classics, from Pulpo a la Gallega finished with smoked paprika and olive oil to a traditional Spanish Tortilla crowned with crisp Jamón Serrano. The experience continues with two distinct expressions of Spain's most iconic dish—thin-layer paellas prepared in the traditional style to achieve the coveted socarrat, the deeply caramelized crust revered by chefs and locals alike. Guests will enjoy both a saffron-infused shrimp rice and a rustic whole chicken preparation before concluding with Torrejas, delicately scented with cinnamon and citrus.
Throughout the evening, curated beverage pairings accompany each course, while our culinary team shares the inspiration, regional traditions, and techniques behind the menu.

APPETIZERS
Spanish Tortilla
Traditional potato tortilla topped with crispy Jamón Serrano chicharrón and extra virgin olive oil aioli.
Chorizo a la Sidra Crostini
Toasted crostini topped with cider-braised Spanish chorizo and seasonal garnishes.
Pulpo a la Gallega
Tender octopus served with smoked paprika, olive oil, flaky sea salt, and potatoes.
MAIN COURSE
Guests will experience two different styles of traditional Spanish rice. Both preparations will emphasize the signature thin-layer technique and crispy socarrat.
Shrimp Rice
A seafood-focused rice highlighting shellfish stock, saffron, and shrimp.
Whole Chicken Rice
A rustic countryside-inspired rice cooked with whole chicken, aromatic vegetables, and traditional Spanish seasonings.
DESSERT
Torrejas
Traditional Spanish-style sweet bread soaked in aromatic milk, lightly fried, and finishedwith cinnamon and sugar.
