Hestia, the Michelin-star restaurant from Emmer & Rye Hospitality Group, will host an intimate sake dinner with Richard Geoffroy, Founder/Maker of IWA Sake and former Chef de Cave of Dom Pérignon. On Thursday, Feb. 26, guests will experience a six-course tasting menu paired with IWA’s newest release of Japanese sake.
The evening marks the US debut of IWA Assemblage 6 (2024), a new expression of ultra-premium Japanese sake shaped by the philosophy of assemblage. Hestia’s chef team will curate a six-course tasting menu with pairings that sit seamlessly alongside the restaurant's live-fire-driven cuisine, allowing IWA's vintage-based sakes to unfold naturally throughout the meal. Alongside the debut of Assemblage 6, guests will taste select earlier IWA releases and the highly anticipated IWA Reserves, an aged sake expression offered only in limited markets worldwide.
