HERITAGE SERIES is Park Hyatt Chicago's signature series celebrating the traditions and craftsmanship behind the world's most celebrated culinary and beverage cultures.
The first chapter, HERITAGE SERIES: Japanese Artistry, transforms artist Dwight Hwang's exhibition in NoMI Gallery into an intimate omakase experience where art is no longer confined to the gallery walls.
Throughout the evening, select seafood featured on the menu is transformed into contemporary gyotaku art – a traditional Japanese printmaking technique dating back to the mid-1800s, originally used by fishermen to document their catches before photography.
Bringing together Dwight Hwang, NoMI's culinary team, and Suntory Brand Ambassador Davey Jones, the experience celebrates the craftsmanship behind Japanese art, cuisine, whisky, and vinyl.
The evening includes:
Japanese tea reception
Six-course seasonal omakase
Curated non-alcoholic beverage pairing highlighting seasonal Japanese flavors
Optional Suntory whisky pairing ($250), featuring Yamazaki 12, Hibiki Harmony and individual tasting pours of its component whiskies, and an exceptionally rare final pour, unreleased to the public
Live gyotaku demonstrations transforming select seafood featured throughout the evening into contemporary works of art
Live vinyl soundtrack inspired by Japan's iconic listening bars
Hand-signed gyotaku print created exclusively for the event
